    Every Morning the Flowers Are New

    So is the craft. Colima 71 keeps a private collection of work by Mexico's master artisans, and pieces from it come up to this Studio and go back down again, a different arrangement each day. What stands on the table this morning will not be there tomorrow. Something else will.

    Agave, and One That Isn't

    Tequila, mezcal and sotol, chosen bottle by bottle from traditional houses. Nothing commercial. Yours to taste. Blue agave from Jalisco. Wild agaves from Oaxaca. Sotol from Chihuahua, distilled from the desert spoon, which is not an agave at all but a desert plant with a tradition entirely its own. Each comes from a small house: families distilling the way their grandparents did, in batches small enough that the hand of the maker is still in the glass. Most guests arrive believing they know what tequila tastes like. Few leave still believing it.

    Kalach's Beams

    Kalach crossed this ceiling with the timber that runs through Mexico's old houses, for its warmth as much as its line. Breakfast is set indoors beneath it, or carried out to the terrace.

    Everything Colima 71 knows how to do is done here, and then done again the next morning. Flowers cut and arranged fresh each day. Craft from the house collection carried up and carried down, so no two mornings are set with the same hands' work. Agave open on the shelf: tequila, mezcal, sotol, poured as you like them. A car waiting at the airport, and a guide who gives you the city from nine until five.
